Good Morning! It’s another dreary day here in Mi Good Morning! It’s another dreary day here in Minnesota; we are all pining for a glimmer of sun and semi-warm breezes. I just finished all the photography for my next cookbook, 100 Morning Baking Treats, (that will be out next spring): a collection of muffins, scones, bundts, yeasted and laminated treats. The photos were a 3 month solo project, and I am happy for a little break (I might be jumping into yet another book, but more on that later!). A little last minute, but had to share the recipe A little last minute, but had to share the recipe for these Chocolate Coconut Cakes (makes 3 6-inch cakes for eating and gifting) because they’re soooo good, and just maybe you haven’t planned your Easter dessert yet. The base is made with coconut milk and has mini chips throughout, a layer of rich pastry cream buttercream (mousseline) and then is topped with chocolate ganache. Each bite is perfectly decadent. ⁣⁣❤️⁣

The scent of toasted sesame oil gives me the same delicious feeling as the smell of brownies right from the oven, so pairing it with chocolate in cookie form seemed like the next logical step. The nutty oil is sweetened by the sugar in the cookie, and tastes amazing with shards of chocolate. I roll the dough in sesame seeds for a bit of crunch, and even more flavor. ⁣
