I’m calling these Chocolate Chip Cookies 2.0. ❤️ This cookie has perfectly crisp edges, a gooey center, plenty of chocolate flavor, and a beautiful crinkly top. I tested all my chocolate recipes for my cookbook, 100 Cookies, with Ghirardelli chocolate. You can easily find their professional products online or retail bags at grocery stores. The chocolate is not only delicious but works in many applications, from melting to glazing. I used two different chocolates in this cookie from Ghirardelli’s new line of 5lb chocolate bags. All of their chocolate chips and wafers are non-GMO and are made from select cacao beans, and they have no artificial colors, flavors, or preservatives.⁣⁣

Summer seems to be the season of birthdays in our Summer seems to be the season of birthdays in our family. I've been working on the perfect birthday cake for years even though I had others that I liked, but I wanted a cake that baked a little higher, and had a tender crumb that tasted amazing with or without frosting.⁣

After many, many tests, I finally got a cake base that I loved. I found the addition of a little almond flour to the yellow cake batter to be the trick: it kept the crumb so moist (over many days), and while I love it piled high with chocolate buttercream frosting, I like it even better without. ❤️⁣

It's smooth, creamy, and rich. The condensed milk balances the tartness of the rhubarb, while the strawberry adds some sweetness and a beautiful shade of pink. ⁣

The cookies are intensely peanut buttery, with crisp edges and a tender, chewy center. The salt both in the cookie and sprinkled on top before baking adds even more flavor depth. They remind me of a peanut butter cookie you’d expect from a bakery, yet they’re easy to make at home.⁣

Good Morning! It’s another dreary day here in Mi Good Morning! It’s another dreary day here in Minnesota; we are all pining for a glimmer of sun and semi-warm breezes. I just finished all the photography for my next cookbook, 100 Morning Baking Treats, (that will be out next spring): a collection of muffins, scones, bundts, yeasted and laminated treats. The photos were a 3 month solo project, and I am happy for a little break (I might be jumping into yet another book, but more on that later!).
