Rhubarb Puff Pastry Tart

rhubarb puff pastry tart | the vanilla bean blog | Sarah Kieffer
Rhubarb finally made an appearance at my local co-op. It’s ruby red stalks called to both me and the puff pastry tucked away in my freezer, so I took it home with me and set to work. I had this rhubarb tart recipe in mind, and didn’t change anything except to stir some raspberry jam into the crème fraîche, and sprinkle the tarts with a good amount of granulated sugar. It’s a truly delicious rhubarb tart.

My brain is temporarily on lockdown, after a month of sick kids and allergy season slowly setting in. So here are some links for your Friday:

Murmuration. Pretty amazing.

I can’t get enough of Melody Gardot‘s latest song.

All the things Anne Lamott has learned in 61 years.

This is a good rumor.

The perfect cookbook to get your mom.

John Steinbeck and his diary.

Rhubarb! I, too, had the worst allergies this year. It’s funny how it’s never regarded as seriously as a cold or flu but can be equally debilitating. Here’s to emerging from that sniffly cloud to enjoy the season.

When I was a young child, visiting the farm of a relative, the farmer came rushing in the house one late in the day, as the sun was dropping beyond the tree line, excitedly telling us to come outside. ‘You’ll see the event of a lifetime!’ was his eager call. It was a murmuration of Starlings over an adjacent farm field and I was mesmerized with awe. It was something I’ve never forgotten, to witness such a beautiful spectacle of nature. It moved and undulated like a shroud on the wind, and we stood there in silence until we could no longer easily see the mass of birds. I later found that I was covered in mosquito bites from standing outside in the twilight, and not once do I recall being bitten. And Anne Lamott’s birthday ruminations have been my go-to mantra ever since I first read it. Plus! Rhubarb!!!!! It’s truly Spring, isn’t it??

I read. I learn. I am so entertained. Thank you for putting together such a beautiful, heartfelt and useful blog. You’re an inspiration. Truly.

Oh, and I ADORE rhubarb and have lots to say on that topic, too. Anne Lamott, Arrested Development and a cook book quiz? I may just have a baker’s crush on you!

They look wonderful. Since moving to sweden I’ve been forced to realise rhubarb probably won’t show up before another month or so, and really I can’t wait! X

This recipe sounds lovely, especially with the jam and creme fraiche. Rhubarb is such a wonderful ingredient.
