Recipe for cheesecake #3 states after baked cheesecake is cooled to transfer to refrigerator and let it chill for at least 6 hours or overnight. Recipe for White Chocolate Ganache says to remove the cheesecake from the freezer.

Do I store cheesecake in refrigerator or freezer?

I think I had the same problem when I made the two years ago (the top was gooey as a result, but still delicious!) I learned that in Canada the highest percentage of whipping/heavy cream we have is 35% but in the States it could be between 35-40%! I wish we had something similar to that for baking, but unfortunately we’ll have to make do with 35!
