As noted in the headnote of 100 Cookies, this Neapolitan cookie was inspired by Pink Door Cookies owner Mathew Rice’s Neapolitan cookie. I stumbled upon the cookie while searching Pinterest for the color pink; this cookie popped up, and I was intrigued by the pretty colors and flavors of Neapolitan ice cream all rolled together. Mathew originally shared his recipe here, but he now makes them at his cookie shop, Pink Door Cookies in Nashville, which he opened in late 2020. “Cookies have always been my favorite thing to make,” Rice told the Nashville Scene. “I feel like they’re humble, but you can elevate them in really wild ways. Having been a pastry chef for almost 20 years at this point, I bring a lot to cookies that’s unexpected, and I’m incorporating the components and flavors of plated desserts but in cookie form.” If you live in the Nashville area, please check out Pink Door Cookies! Along with his Original Neapolitan Cookie, Mathew also has a variety of other flavors: Pink Lemonade, Strawberry Corn, Cotton Candy, Rainbow Brownie, Blueberry Pancake, Cinnamon Toast Snickerdoodle, and classic Chocolate Chip, just to name a few.

We’ve had a heat wave here in Minneapolis, which I’ve welcomed with open arms for two reasons: last year we were robbed of a fall (it rained and was cold and the sun rarely shone and we never got our bright, crisp, Autumn days) and I’m not ready to let go of summer quite yet. I’m still drinking an Iced Americano through out the day, my windows are flung wide open from dawn to dusk, and I’ve tried to keep baking to a minimum so as not to have to turn the air conditioning back on (it just feels wrong in September). I also made these ice cakes from Alana Kysar’s beautiful new cookbook, Aloha Kitchen, to cool us off in the afternoons. I am enamored with Alana’s book – it is a gorgeous collection of recipes: favorites from her childhood growing up in Hawai’i, along with modern twists, and accompanied by her stunning photographs. She also gives a brief history lesson on the Hawaiian islands, the food culture of the islands, and some political history as well. Her introduction to the book has stayed with me for months; giving me much food for thought. She writes: “This Hawaiian word […]

I’m back with more swirl buns! When I stumbled upon the recipe for Strawberry Poppy Seed Buns from the new Bake From Scratch cookbook, I decided to drop everything (which was really just taking a break from recipe testing for my next book) and make them. If you haven’t heard of Bake From Scratch, you can find their webpage here. They also have a monthly magazine that is a great read. The dough came together beautifully and was a dream to work with, and my family and neighbors devoured them immediately then raved all day about them, so I knew the recipe was gold. Strawberries aren’t in season yet, but here freeze-dried strawberries are crushed into a powder (a genius move), and I was able to round up a few ripe strawberries at my local grocery store for the cream cheese filling. More Morning Bun Recipes: Rhubarb Blackberry Streusel Buns Morning Buns Strawberries and Cream Brioche Buns Cardamom Sugar Buns Cinnamon Buns. ****************************** A few things: *Last spring I was on an episode of Cherry Bombe Radio recorded here in Minneapolis at The Lynhall.

I made a similar cake to this strawberry shortcake cake last week, and then decided to try it again, this time with 3 layers of cake for a slightly ‘fancier’ presentation. Classic strawberry shortcake is usually composed of subtly sweet biscuits, strawberries, and whipped cream. This recipe is adapted from my cookbook, The Vanilla Bean Baking Book. Strawberry Shortcake Cake Recipe Making strawberry shortcake into a cake was a win – the yellow cake layers are thin (which I prefer on a shortcake), instead of biscuit-like (which I also prefer), and are piled with cream cheese whipped cream and strawberries. Notes for making this cake: If you need a visual on cutting the strawberry shortcake cake, I have one here over on Handmade Charlotte. Flipping the cake out of the sheet pan can be a precarious. Just go slow, and use the parchment paper underneath to help you sort of lift it out. If it does crack in the center, the cake can still be cut into three pieces, just hide the broken parts in the middle layer when stacking the cake. I usually make the cake the day before, wrap it in plastic in the pan once it’s cooled, […]

Recently I spent an evening eating incredible ice cream with some dear friends and was so inspired by the flavor combinations: olive oil with fleur de sel, cardamom black pepper, and cucumber sorbet, just to name a few we sampled. It was all amazing, and I immediately came home and started coming up with my own unique blends [but mine were much much easier to make, thanks to no-churning]. After making no-churn vanilla bourbon and bittersweet chocolate, I wanted to have a fruit-based ice cream. So here it is, with a little cookie crunch. How To Make No-Churn Ice Cream I dedicated a whole chapter in my first cookbook to no-churn ice cream recipes because I love the ease and versatility of this method so much. No-churn ice cream is simply made by folding whipped cream into condensed milk, along with your favorite flavors or mix-in’s, then spreading in a pan and freezing. Besides heavy cream and sweetened condensed milk, you’ll add a bit of salt to cut the sweetness. And I like to add a small amount of cream cheese for it’s tang, to balance the flavors, and keep the ice cream smooth when it’s frozen.
