This cookie bar is a pleasant surprise. It’s satisfyingly dense without feeling heavy or overbearing, giving it a substantial bite that still feels well-crafted. The sweetness is spot on—rich enough to feel indulgent, but balanced in a way most cookie bars miss. Instead of being cloying or one-note, the flavors come together smoothly, making it easy to enjoy every bite without feeling overwhelmed. It’s the kind of treat that feels intentional rather than excessive, and definitely stands out from the overly sweet cookie bars you usually find.

Great recipe, turned out perfect! I wanted a quick, festive, treat for a work party today, so whipped these up this morning. I followed the recipe exactly and they turned out perfect. Fortunately I have a big bottle of red food coloring from making the red velvet cookies last year, so made a vibrant red icing and topped with green and red sprinkles.
Spreading the dough is a bit of a pain. Next time I'll probably dollop it around the pan instead of dumping the pile in the middle, but wrapping plastic wrap around my hand worked. Of course it doesn't have to be perfect since you're icing anyway. Bake time was spot on at 23 minutes.
I'll likely make again this weekend for a little teen birthday party.
