					<description><![CDATA[Yesterday I emerged from a week and a half of mourning the passing of my father and a case of COVID, which I had caught in the hospital.  I NEEDED to bake.  These Breakfast Cookies were just the thing.  Filled with healthy ingredients my body needs, but indulgent enough for my soul.  Thank you Sarah.]]></description>

					<description><![CDATA[Both of my kids (ages 7 and 9) give these TWO THUMBS UP, and they&#039;re pretty hard to please.  (9yo iterates: &quot;ALL MY FINGERS ARE THUMBS AND THEY&#039;RE ALL UP!&quot;)
I modified the recipe a bit: I forgot to add the poppy seeds; I subbed Chia for flax, cashews for pecans, and golden raisins for the KA jammy bits. I added MORE CHOCOLATE (in the form of chocolate chips, since I had small creatures to please).  Also, I threw the cashews in the food processor for a bit because it&#039;s always disappointing to have your cookie texture ruined by a huge chunk of nut, IMO.
Another great recipe from the Sarah Kieffer handbook!  We haven&#039;t been disappointed yet, and we&#039;re working our way through all of your recipe books!  #loyalfollower]]></description>

I also didn&#039;t have flaxseed or white sesame, so I used 1/4 cup of  King Arthur Harvest Grains Blend. Instead of jammy bits I used King Arthur Baker&#039;s Fruit Blend. It all worked out great, and the substitutions kept in the spirit of the heartiness of the cookie.. Sprinkled the tops with Maldon salt and black sesame. I don&#039;t have muffin rings so I rolled them into balls and they flattened beautifully during baking. It really is a great breakfast cookie!]]></description>
