Dear Sarah:

I made this cake today for my son’s 17th birthday. It was the most delicious, moist chocolate cake that I have ever made (and I have baked a lot of them!). Truly a special recipe - had a feeling it was going to be good based off of how the batter behaved. So tender and light! I believe the egg amounts and the creme fraiche made all the difference!

Thank you for such a beautiful recipe!

I baked it. Some procedural comments. In no order of importance. For next time.
A deeper pan would be a tad better
Increasing the sugar for the walnuts to 3/4 cups
I mixed all but the flour, baking powder, baking soda, and coffee slowly to dissolve the pieces of dark brown sugar with the stand mixer on slow, using the whisk attachment.. I mixed the baking powder and soda, plus flour, and coffee by hand as the last step.
Baked in for 20 minutes.
No need for mise an place.
I had a quarter of the cake left after the party.

I live in Louisiana and never been a fan of Texas sheet cake. I am the same way, need more chocolate the better!! This cookbook sounds amazing. I can't wait for it. I have a Question tho, what is that recipe on the cover?! It's so drool worther. I am a fan of your brown butter cookie that I always make. It's my favorite cookie! I leave the dough in the fridge overnight (in balls) which is the secret. I can't eat chocolate chip cookies without that brown butter YUMMM!!! but it seems to be the same recipe in a sheet pan. I love bars too, I would top a ganache or icing over it too even more YUMMM (I have your 100 cookie cookbook!) I need more :)
