They were good... but something about them was definitely off, I realized they had more of a cornbread muffin effect in both flavor and texture, perhaps due to the almond flour? These definitely didn&#039;t have the light, bready consistency of what you&#039;d normally expect in a blueberry muffin. They were a little dense, and if I didn&#039;t know what ingredients were in it, I wouldn&#039;t definitely assume they had some cornmeal. Just my experience!]]></description>

Just made these muffins. The taste was about the same for both.  Maybe I need to add more blueberry extract, huh?  What do you think?  Have you ever cooked with an extract?
