This cake is a winner!! So moist and chocolately, and so easy!! My kind of cake. The glaze, however, is off. The taste is fine but it is very runny. It’s nothing like in the photos. I thought I did something wrong so I made it a second time and got the same results. I baked the cake in an 8” loaf pan. It rose beautifully and the top domed but that caused a problem for the “glaze” (and it is a glaze; it is not a frosting). Because the glaze was so runny, even after allowing time to set-up, it ran into the corners of the pan. The result was glaze at the ends and along the sides of the cake but the domed top had no glaze. I will definitely make this again but I will use a true ganache recipe for the topping (and I will bake the cake in a 9” loaf pan so there is room for the frosting. So, the cake gets 5 stars; the topping 2 stars.

I made this the other day, and used crème fraiche for the sour cream and blommers black cocoa for the cocoa powder. I recently saw and bought Silk brand, dairy-free heavy cream at the grocery store (Meijer). I have yet to try it. I’m sure it would work great!

Any suggestion for a glaze that doesn’t use heavy cream (e.g., something I can make that’s a lactose free glaze)? The cake/loaf looks delicious to make!
