How do I know if the dough has risen enough after 1 1/2 hours? Is it OK to take the top off to check it?

I just bought 2 of the circular pans and one heart shaped from Amazon and found an antique circle pan on eBay ! Once they all arrive I’ll need some recipes lol ! I’m gonna start with the cinnamon swirl! Would you have any others? So always 2 lbs of dough ? Any kind of dough?

My brioche dough turned out sticky and had a hard time rolling it. Any recommendations to fix this? Thanks

In reply to Jeanne. I also remember buying a cinnamon raisin bread at a bakery in Little Falls, NJ that went one step more decadent by brushing the loaf with melted butter and then rolling it in cinnamon and sugar. Pure heaven. I miss baker owned shops.

Bread looks beautiful. Many years ago there was a family run bakery in Webster New York. They made the cinnamon swirl bread this way. I can remember seeing all the molds in the back room. Was a great favorite of my mom. I will have to get the molds and try this out. Thank you for a pleasant memory!!

This is such a wonderful idea. It comes out so beautiful!!! I shall look in envy at this bread in hopes that one day gluten-free bread can look and taste as wonderful as this. Until that day, I will continue to look at pictures.
