I took a cake decorating class over 50 years ago from a woman who owned a bakery and she gave the best piece of advice I've ever had. After a cake is done baking, set your timer for 10 minutes (the pan will still be warm/hot). Using pot holders, turn the cake onto either your serving plate or a plastic wrap-lined cookie sheet. Immediately cover the warm cake with plastic wrap and put it in the refrigerator. All that steam escaping from the cake will be trapped and will make your cake nice and moist. Remove from refrigerator and let come to room temperature before icing it.

Thank you for catching! It is 2 3/4 cups flour, 390 grams. You are correct that the volume measurement was off. It is now updated!

The flour measurement seems off. 2 1/4 c @ 142 g per cup is less than 390 g. Should the volume or the weight be adjusted?
