I needed to use up the crème fraiche I had bought, and now I have the best excuse to always buy crème fraiche. I love how simple everything comes together with precision!
The Gold Medal AP flour package states ¼ cup = 30 grams. How is it possible to get a cup that is 142 grams? I don't understand how different bakers get different weights for a cup from the same bag of flour. How would the cake change if a person based it on 1 cup = 120 g Gold Medal AP flour?

Have you tried this cake with other flavors of frosting? I’m curious about using a strawberry frosting. But any recommendations would be great! I’m trying to avoid a chocolate cake-chocolate frosting combo. Thanks!

Yes, you can substitute water for coffee, but the flavor will be a bit less rich and chocolatey, as the coffee enhances the chocolate flavor.

This cake was very dense for me. I couldn't find creme fraiche, so I used sour cream. Perhaps that's why? Otherwise, I followed the recipe exactly and weighed all of my ingredients. My frosting wasn't very thick and I probably shouldn't have added the water, maybe just more confectioners sugar. I'm a big fan of your recipes, Sara, but this one was a miss for me.
