Made this past weekend, and absolutely divine. Highly recommend. I used a normal muffin tin, but used the tall pretty, brown liners, took 28 min to cook.

When my grandmother passed on – I baked banana cake … for these very same reasons and now, all these years later it’s a joyous reunion each time I bake that simple banana snack cake… and I think of my grandmother…. reliving memories both joy filled and not so joy filled that comprise life. Hi Sarah, In a weird, sad coincidence, my father, who passed a few weeks ago, was born on July 4th. Reading your words today is very much a comfort to me. A baking question – can I use all oil in the muffins instead of any butter? Since COVID I’m baking pretty much only with oils. Of course I’m going to have to use butter in the streusel!
