Sarah! Love the photos … I bake with coconut milk often! Especially in place of cream or regular milk to vegan-ize recipes … its high fat content makes a beautiful chocolate cake crumb … ! mmmm coconut cream pie. XO

Coconut milk is incredible for baking, glad you’re getting to play around with it. I’ve definitely made coconut sweetened condensed milk before (because vegan seven layer bars, duh), and coconut whipped cream is also awesome, but in the summertime it’s all about coconut milk fudgesicles! http://www.woodenspoonbaking.com/2014/07/vegan-coconut-milk-fudgesicles.html

I, like you, also have not had much experience baking with coconut milk.. which is strange because it seems like such a natural ingredient to bake with! I am so inspired to try my hand at a few coconut milk based recipes now. Love it.

I can’t say I have ever thought of using coconut milk. I too know the anguish of allergies, and for me it’s nuts so I just tend to stick with normal milk, but don’t like to have too much. What a great subsitute this seems to be. I would devour every single thing on this page over and over!
